Since it was my Father In-Law's birthday last week and he loves blueberries - I decided to combine my new favorite thing (cupcakes) this his favorite thing (blueberries). Like I did before, I used a regular box cake mix and baked according to the directions. Hopefully, one of these days I'll be adventurous enough to make my own batter, but until then Betty Crocker is my friend.
Here is the recipe I used to make the frosting. It isn't exact since I had to add a little more of some things to get the right consistency for the frosting.
6 cups confectioners sugar
2 cups butter (room temp)
2 tbs heavy whipping cream
4 tsp vanilla extract
12 tablespoons blueberry syrup(see directions below)
First make the blueberry syrup
Take 1 pint of blueberry's and mash them in a food processor or blender until they are a thick juice.
Put the thick juice mixture into a small saucepan and add 1/2 cup of sugar.
Bring to a boil, stirring occasionally, then let simmer for 15 mins.
After 15 mins, remove from heat and let cool completely.
For the Frosting

Mix the butter until creamy, then slowly start to add the confectioners sugar until it is paste like.
Add the heavy cream and vanilla extract and continue to mix.
Finally, stir in the blueberry syrup
This time I learned my lesson when frosting the cupcakes. I used a 12" bag and a Wilton 1M tip.
They came out great and for the large cupcakes, I topped them with a blueberry.
