I was recently been inspired by Lisa of For the Love of Frosting to start baking more. And not just any baking, but cupcakes (to start at least). Last night's project - Vanilla cupcakes with Amaretto frosting (my husband LOVES Amaretto anything)!For lack of time (and practice), I used Pillsbury Classic Yellow Cake and baked according to directions on the box. I did 12 large cupcakes and 24 mini cupcakes (because I ran out of large cupcake cups).
To make the frosting I used the following ingredients:
2/3 cup butter, softened
6 cups of confectioners sugar
1 1/2 tbs of milk
1/4 Amaretto
1 tsp of Vanilla extract
I mixed the butter until it was creamy, then I slowly added the confectioners sugar 1/4 cup at a time until the mixture was paste like. Then I added the milk and amaretto until it was super creamy and spreadable. Finally, I stirred in the Vanilla Extract with a spatula.
I used an 8" decorators bag with a Wilton #21 (star) decorating tip. Next time I will use a bigger bag and probably the 1M tip for a different look, but this was what I already had at home.
