Blueberry Frosted Cupcakes


Since it was my Father In-Law's birthday last week and he loves blueberries - I decided to combine my new favorite thing (cupcakes) this his favorite thing (blueberries).

Like I did before, I used a regular box cake mix and baked according to the directions. Hopefully, one of these days I'll be adventurous enough to make my own batter, but until then Betty Crocker is my friend.

Here is the recipe I used to make the frosting. It isn't exact since I had to add a little more of some things to get the right consistency for the frosting.

6 cups confectioners sugar
2 cups butter (room temp)
2 tbs heavy whipping cream
4 tsp vanilla extract
12 tablespoons blueberry syrup(see directions below)

First make the blueberry syrup
Take 1 pint of blueberry's and mash them in a food processor or blender until they are a thick juice.
Put the thick juice mixture into a small saucepan and add 1/2 cup of sugar.
Bring to a boil, stirring occasionally, then let simmer for 15 mins.
After 15 mins, remove from heat and let cool completely.

For the Frosting

Mix the butter until creamy, then slowly start to add the confectioners sugar until it is paste like.
Add the heavy cream and vanilla extract and continue to mix.
Finally, stir in the blueberry syrup

This time I learned my lesson when frosting the cupcakes. I used a 12" bag and a Wilton 1M tip.

They came out great and for the large cupcakes, I topped them with a blueberry.

Wardrobe Fixer Upper

This past weekend we went to an antique store in Kutztown (same place we purchased our dining room hutch) and found a really great 2 door wardrobe chiffarobe for $75! Since the renovations at our house are fairly slow right now, we hopefully can get this done in the next couple of weeks.

I'll keep you posted on how it's going and give you step by step instructions on how to refinish a antique piece of furniture.

Amaretto Cupcakes


I was recently been inspired by Lisa of For the Love of Frosting to start baking more. And not just any baking, but cupcakes (to start at least). Last night's project - Vanilla cupcakes with Amaretto frosting (my husband LOVES Amaretto anything)!

For lack of time (and practice), I used Pillsbury Classic Yellow Cake and baked according to directions on the box. I did 12 large cupcakes and 24 mini cupcakes (because I ran out of large cupcake cups).

To make the frosting I used the following ingredients:

2/3 cup butter, softened
6 cups of confectioners sugar
1 1/2 tbs of milk
1/4 Amaretto
1 tsp of Vanilla extract

I mixed the butter until it was creamy, then I slowly added the confectioners sugar 1/4 cup at a time until the mixture was paste like. Then I added the milk and amaretto until it was super creamy and spreadable. Finally, I stirred in the Vanilla Extract with a spatula.

I used an 8" decorators bag with a Wilton #21 (star) decorating tip. Next time I will use a bigger bag and probably the 1M tip for a different look, but this was what I already had at home.

The Princess tuns 2

We were really excited to celebrate our niece's birthday last month. Even though it was almost 100 degrees and the party was outside, everyone had a good time.

DH and I also got to meet our friend's twin girls for the first time! They were so adorable and I couldn't help but take a ton of pictures of them.

The Toy Box

Well, we finally finished the Knock-off wood toy box, just in time for our niece's birthday! It was a huge success and worth all the hard work (and trips to the fabric store). Here's the final result!

We painted the top in chalkboard paint so that she could draw whenever she felt like it.


It was great to see her excited about it and she immediately went over to it and started taking all the stuffed animals and new toys out. It was such a good feeling knowing she loved it.

Like the first ant at a picinic

This always happens! I plan a party, make delicious food, set the table, greet people as they walk in, invite them to sit down, relax and eat... and forget to take pictures. It is something I really need to work on.

At least I can share the menu with you:

Menu:
Caesar salad
Mini hot dogs wrapped in crescent rolls
Buffalo chicken wing dip in whole wheat tortillas
Veggie tray with spinach dip

Fruit kabobs

Beverages:
White Wine
Sangria
Soda
Water
Lemonade
Raspberry Iced Tea

In addition to the menu that I prepared, Roz Johnson (my ONE AND ONLY Pampered Chef Consultant) prepared a chili cornbread bake and a super yummy dessert from their recipe book.

The whole party cost about $90 and I had 12 people attend. Not to shabby!
